This Asian-style chicken with mushrooms and onions combines savory flavors with tender textures. Juicy chicken meets earthy shiitake and sweet onions, seasoned with soy sauce, ginger and garlic. You need few steps and get a lot of flavor.

It works as a quick weeknight dinner and looks good enough for guests. You can swap in other mushrooms or add more vegetables to change the texture and taste. The method is simple and you can find the ingredients in most supermarkets.

Ingredients

  • 500 g chicken breast, cut into strips
  • 8-10 dried shiitake mushrooms (soaked in water, rinsed and sliced)
  • 2 large onions, cut into half rings
  • 3 garlic cloves, finely chopped
  • 1 piece fresh ginger (about 2 cm), finely chopped
  • 3 tablespoons soy sauce
  • 2 tablespoons vegetable oil
  • 1 tablespoon sesame oil
  • 1 teaspoon sugar
  • 1/2 teaspoon ground black pepper
  • Optional: scallions (green onions) and sesame seeds for garnish

Instructions

  1. Marinate the chicken: In a medium bowl, mix the chicken with 1 tablespoon soy sauce, the sesame oil and the black pepper. Let it marinate for at least 10 minutes.
  2. Prepare the mushrooms and onions: While the chicken marinates, squeeze the soaked shiitake dry, cut off the tough stems and slice the caps. Peel the onions and cut them into half rings.
  3. Brown the chicken: Heat 1 tablespoon of the vegetable oil in a large pan or wok over medium-high heat. Add the marinated chicken and fry for 5-7 minutes until browned and almost cooked through. Take it out and set aside.
  4. Sauté the vegetables: Heat the remaining oil in the same wok. Add the garlic and ginger and fry for about 30 seconds until fragrant. Add the onions and mushrooms and cook for 5-7 minutes until the onions are soft and the mushrooms are golden.
  5. Combine: Return the chicken to the wok. Add the remaining soy sauce and the sugar. Stir well and cook for another 3-5 minutes until the chicken is cooked through and coated in the sauce.
  6. Serve: Serve hot, garnished with chopped scallions and sesame seeds if you like.
