Dessert

Ba Si Xiang Jiao is a popular Chinese dessert in which bananas are served in a sweet caramel sauce. The caramel coating gives the bananas a crunchy outer layer that hardens as it cools, giving the dessert an unusual texture.
Ba Si Xiang Jiao (拔丝香蕉), caramelized bananas

Ingredients

  • 4 ripe bananas
  • 150 g sugar
  • 100 ml water
  • 1 tsp sesame oil
  • Ice water (for serving)

Instructions

  1. Peel the bananas and halve them lengthwise.
  2. Heat the sugar in a pan over medium heat until it melts and turns golden brown.
  3. Carefully add the water to the melted sugar and stir until the sugar has dissolved completely and the mixture boils.
  4. Add the banana halves to the caramel sauce and cook each side for about 2 to 3 minutes, until well coated.
  5. Stir the sesame oil into the caramel sauce.
  6. Take the bananas out of the pan and dip them into ice water right away, so the caramel layer hardens.
  7. Lift the caramelized bananas out of the ice water, drain them and serve immediately.
