Drinks
Baekseju translates as "wine for a hundred years". For this home version, you simmer ginseng, goji berries, astragalus, licorice, and cinnamon in water and mix the brew with makgeolli. The drink tastes mildly sweet and herbal, with cinnamon in the finish.

Ingredients
- 1 liter rice wine (makgeolli)
- 10 g ginseng root
- 5 g goji berries
- 5 g astragalus root
- 3 g licorice root
- 2 g cinnamon sticks
- 1 liter water
Instructions
- 1. Bring the water to a boil in a large pot.
- 2. Add the ginseng, goji berries, astragalus root, licorice root, and cinnamon sticks.
- 3. Reduce the heat and simmer the herbs and spices for 40 minutes.
- 4. Pour the mixture through a fine strainer and discard the solids.
- 5. Mix the strained herbal infusion with the rice wine in a clean container.
- 6. Pour the baekseju into bottles and chill before serving.
