Báiyùn Dòu Huā (白雲豆花): tofu dessert with white beans

Ingredients

  • 200 g silken tofu
  • 100 g white beans, soaked overnight
  • 50 g sugar
  • 1 liter water
  • 1 tsp vanilla extract
  • 1 pinch of salt

Instructions

  1. Soak the white beans in water overnight.
  2. The next day, drain the beans and put them in a pot with fresh water. Bring to a boil and cook over medium heat for about 40 minutes, until the beans are soft.
  3. Add water if too much evaporates during cooking.
  4. When the beans are soft, add the sugar, vanilla extract and a pinch of salt and simmer for another 10 minutes.
  5. Meanwhile, cut the silken tofu into cubes and gently place them in a serving bowl.
  6. Pour the hot bean mixture over the tofu and let it sit for at least 10 minutes so the flavors blend.
  7. Serve the dessert warm or cold.
