Salad
Nộm Hoa Chuối is a traditional Vietnamese salad made from banana blossom. It is crunchy and fresh, and usually comes with fresh herbs, peanuts and a tangy, spicy dressing.

Ingredients
- 1 banana blossom
- 1 tbsp vinegar (for soaking the banana blossom)
- 2 carrots, julienned
- 1 cucumber, julienned
- 1 small red onion, thinly sliced
- 1 handful fresh cilantro, chopped
- 1 handful fresh mint, chopped
- 50 g roasted peanuts, coarsely chopped
- 2 tbsp fried shallots
For the dressing:
- 3 tbsp fish sauce
- 1 tbsp sugar
- 2 tbsp lime juice
- 1 garlic clove, finely chopped
- 1 red chili, seeded and finely chopped
Instructions
- Prepare the banana blossom: remove the dark outer layers, slice the pale inner layers thinly and put them straight into a bowl of water with the vinegar so they do not discolor.
- Cut the carrots, cucumber and red onion into thin strips.
- Lift the banana blossom out of the water, drain well and mix with the prepared vegetables in a large bowl.
- Add the cilantro and mint.
- For the dressing, whisk all the dressing ingredients in a small bowl until the sugar has dissolved.
- Pour the dressing over the salad and toss well.
- Sprinkle the salad with the chopped peanuts and fried shallots.
- Let the salad sit for a few minutes before serving so the flavors can come together.
