Bánh Bò Nướng is a Vietnamese cake made from rice flour and coconut milk. While it bakes, long air channels form inside, and the crust turns golden brown and tastes of honey and coconut.

Ingredients
- 200 g rice flour
- 1 tsp baking powder
- 200 g sugar
- 400 ml coconut milk
- 1 tsp vanilla extract
- 2 tbsp honey
- 1 egg
- Green pandan paste (optional, for color)
Instructions
- Preheat the oven to 180 °C (350 °F).
- Mix the rice flour and baking powder in a large bowl.
- In another pot, warm the coconut milk with the sugar, honey and vanilla extract until the sugar has completely dissolved.
- Slowly add the warm coconut milk mixture to the dry ingredients and stir well to avoid lumps.
- Add the egg and stir until you have a smooth batter. For a green color, add a few drops of pandan paste.
- Pour the batter into a greased cake pan.
- Bake the cake for 40 minutes, or until it is firm and golden brown.
- After baking, let the cake cool completely before cutting it into pieces.
