Bánh Bò Nướng is a traditional Vietnamese cake known for its honeycomb crumb and sweet, lightly caramelized flavor. This recipe uses simple ingredients and takes a little patience to get the texture right.

Ingredients
- 200 g rice flour
- 1 tsp baking powder
- 200 g sugar
- 400 ml (1 2/3 cups) coconut milk
- 1 tsp vanilla extract
- 2 tbsp honey
- 1 egg
- Green pandan paste (optional, for color)
Instructions
- Preheat the oven to 180°C (350°F).
- Mix the rice flour and baking powder in a large bowl.
- In a saucepan, warm the coconut milk with the sugar, honey and vanilla extract until the sugar has dissolved.
- Pour the warm coconut milk mixture slowly into the dry ingredients, stirring well so no lumps form.
- Add the egg and whisk until the batter is smooth. For a green cake, add a few drops of pandan paste.
- Pour the batter into a greased cake pan.
- Bake the cake for 40 minutes, or until it is set and golden brown.
- Let the cake cool completely before you cut it into pieces.
