Main course
Bánh Cuốn are a traditional Vietnamese specialty: thin, steamed rice flour sheets rolled around a savory filling of ground pork and mushrooms. They usually come with fresh herbs and a spicy fish sauce dip.

Ingredients
- 200 g rice flour
- 500 ml (2 cups) water
- 1 tsp salt
- 1 tsp vegetable oil
Alternative
- Rice paper
- 200 g ground pork
- 100 g shiitake mushrooms, finely chopped
- 1 medium onion, finely diced
- 2 garlic cloves, finely chopped
- 1 tbsp fish sauce
- 1 tbsp soy sauce
- 1 tsp pepper
- Fresh herbs (cilantro, mint)
- Sliced chili
- Chopped scallions
- Extra fish sauce for serving
Instructions
- Make the batter: whisk the rice flour, water, salt and oil until you have a smooth, thin liquid.
- Lightly oil a pan and pour in a thin layer of batter to make a thin crepe. Steam each crepe on its own until it turns translucent.
- For the filling, brown the ground pork in a pan. Add the onion, garlic and mushrooms and keep frying until everything is cooked through.
- Add the fish sauce, soy sauce and pepper to the meat mixture and mix well.
- Spoon the filling onto each crepe, roll it up and keep the rolls warm.
- Garnish the rolls with fresh herbs, sliced chili and scallions.
- Serve with extra fish sauce for dipping.
