Main Course
Bāozi are traditional Chinese steamed buns. You can fill them with almost anything, from meat to vegetables. This version uses a savory pork filling.

Ingredients
- 500 g (4 cups) all-purpose flour
- 1 tsp active dry yeast
- 300 ml (1 1/4 cups) warm water
- 1 tsp sugar
- 1 tsp salt
- 300 g ground pork
- 100 g napa cabbage, chopped
- 2 scallions, finely chopped
- 2 garlic cloves, finely chopped
- 1 tbsp soy sauce
- 1 tbsp sesame oil
- 1 tsp grated ginger
- Salt to taste
- Pepper to taste
Instructions
- Knead the flour, yeast, sugar, 1 tsp salt and warm water into a smooth dough. Let it rise for 1 hour.
- Knead the risen dough again and divide it into 12 equal pieces.
- For the filling, mix the ground pork, napa cabbage, scallions, garlic, soy sauce, sesame oil, ginger, salt and pepper.
- Roll each piece of dough into a flat round. Place about 2 tablespoons of filling in the center, gather the edges up over the filling and pinch them closed.
- Set each bun on a square of parchment paper so it doesn't stick to the steamer.
- Bring a pot of water to a boil and steam the buns for 20 minutes.
- Let the buns cool for a few minutes before serving.
