Main course

Fried noodles with beef are a classic in many Asian kitchens, and you can vary them in lots of ways. The dish pairs tender strips of beef with savory soy sauce and fresh bell peppers and onions. Light soy sauce, dark soy sauce and oyster sauce give the noodles depth. You marinate the beef in cooking wine, pepper, oil and cornstarch, which keeps it tender and seasons it through. Make it for a quick dinner or a filling lunch.

Ingredients

  • 400 g beef, cut into thin strips
  • 400 g noodles (ideally Asian egg noodles)
  • 1 green bell pepper, cut into strips
  • 1 red bell pepper, cut into strips
  • 2 onions, cut into half-rings
  • 2 tbsp light soy sauce
  • 1 tbsp dark soy sauce
  • 2 tbsp oyster sauce
  • 2 tsp Shaoxing wine (Chinese cooking wine)
  • 1 tsp ground black pepper
  • 2 tbsp cooking oil, plus a little extra for frying
  • 1 tsp cornstarch

Instructions

    Marinate the beef

    1. In a medium bowl, mix the beef well with the cooking wine, 1 tbsp of the light soy sauce, the black pepper, 1 tbsp of the oil and the cornstarch. Leave it to marinate for at least 15 minutes so the flavors soak in.

    Cook the noodles

    1. Bring a large pot of water to a boil. Cook the noodles according to the package instructions, but drain them one minute early and rinse with cold water to stop the cooking. Drain well and set aside.

    Stir-fry the beef and noodles

    1. Heat 1 tbsp of oil in a large wok or pan over high heat. Add the marinated beef and fry it quickly until browned all over, about 3 to 4 minutes. Take the beef out of the wok and set aside.
    2. Heat a little more oil in the same wok and add the onions and bell peppers. Stir-fry for 2 to 3 minutes, stirring constantly, until they soften.
    3. Add the cooked noodles and toss well. Pour the dark soy sauce, the remaining light soy sauce and the oyster sauce over the noodles and mix thoroughly. Keep frying until the noodles are hot and evenly coated.

    Finish and serve

    1. Return the beef to the wok and heat everything together for 1 to 2 more minutes so the flavors come together.
    2. Serve the beef noodles hot, ideally garnished with fresh herbs such as cilantro or scallions.
