Main Course

For this Chinese stir-fry, you marinate thin strips of beef in soy sauce and starch and sear them over high heat. Green and red bell peppers stay crisp, and oyster sauce and broth pull everything together into a glossy sauce. With rice, the meal takes about 40 minutes.
Stir-fried beef with oyster sauce and green bell pepper

Ingredients

    For the beef:

    • 500 g beef rump or sirloin steak
    • 1 tbsp light soy sauce
    • 1 tbsp Shaoxing wine (Chinese cooking rice wine)
    • 1 tsp cornstarch
    • 1 tbsp water

    For the vegetables and sauce:

    • 2 green bell peppers
    • 1 red bell pepper
    • 1 onion
    • 3 garlic cloves
    • 1 tbsp freshly grated ginger
    • 3 tbsp oyster sauce
    • 100 ml beef broth or water
    • 1 tsp sugar
    • 1 tsp cornstarch
    • 2 tbsp cold water
    • 1 pinch white pepper
    • 3 tbsp vegetable oil
    • 2 scallions, for garnish

    Instructions

    1. Slice the beef across the grain into strips 5 mm thick and 5 cm long. Mix with the soy sauce, Shaoxing wine, 1 tsp cornstarch and 1 tbsp water and let it marinate for 15 minutes.
    2. Seed the bell peppers and cut them into 2 cm pieces. Cut the onion into wedges, chop the garlic and grate the ginger.
    3. In a small bowl, whisk the oyster sauce, broth, sugar, 1 tsp cornstarch, cold water and white pepper until smooth.
    4. Heat the wok over the highest heat until it smokes, then add 2 tbsp oil. Spread out half the beef, leave it for 30 seconds, then stir-fry for 1 minute until browned outside. Take it out and cook the second half the same way.
    5. Add 1 tbsp oil to the wok and fry the onion for 2 minutes. Add the garlic and ginger and stir for 30 seconds, until fragrant.
    6. Add the bell peppers and stir-fry for 2 minutes. You want them to keep some bite.
    7. Return the beef to the wok, stir the sauce again and pour it in. Toss everything for 1 minute, until the sauce thickens and turns glossy.
    8. Slice the scallions, scatter them over the top and serve right away with steamed rice.
