Bihun Goreng, Indonesian fried rice vermicelli with vegetables

Ingredients

  • 200 g rice vermicelli (bihun, thin rice noodles) or glass noodles
  • 2 tbsp vegetable oil
  • 1 large onion, sliced
  • 2 garlic cloves, finely chopped
  • 1 red bell pepper, cut into strips
  • 1 carrot, cut into strips
  • 100 g green cabbage, finely shredded
  • 2 scallions, sliced
  • 2 tbsp soy sauce
  • 1 tbsp kecap manis (sweet Indonesian soy sauce)
  • 1 tbsp oyster sauce
  • 1 tsp sambal oelek (Indonesian chili paste), optional
  • Salt and pepper, to taste
  • 2 sprigs cilantro, for garnish

Instructions

  1. Soak the noodles in hot water according to the package instructions, usually 5 to 10 minutes. Drain well and cut them once with kitchen scissors.
  2. Heat the oil in a wok or large pan. Fry the onion and garlic over medium heat for 3 minutes, until soft and translucent.
  3. Add the carrot, bell pepper and cabbage and stir-fry for 5 minutes, until the vegetables are tender but still have some bite.
  4. Add the noodles, soy sauce, kecap manis, oyster sauce and sambal oelek. Toss everything with two spatulas and fry for another 5 minutes, until the noodles have absorbed the sauce.
  5. Season with salt and pepper.
  6. Stir in the scallions and take the wok off the heat.
  7. Pick the cilantro leaves over the top and serve right away.
