Dessert

Bingsu is Korea's summer dessert of finely shaved milk ice. You freeze sweetened milk in a thin layer, shave it into fluffy flakes and pile red bean paste, strawberries, kiwi, mango and small mochi on top. Condensed milk and toasted almonds go over the top last, and you eat it right away.

Ingredients

    For the milk ice:

    • 400 ml (1 2/3 cups) whole milk or soy milk
    • 3 tbsp sweetened condensed milk

    For the toppings:

    • 150 g sweetened red bean paste (anko or pat, made from adzuki beans)
    • 80 g strawberries
    • 1 kiwi
    • 80 g mango
    • 50 g small mochi (soft rice cake cubes)
    • 2 tbsp sweetened condensed milk
    • 2 tbsp sliced almonds

    Instructions

    1. Stir the milk and 3 tbsp condensed milk together until the condensed milk dissolves completely. Pour the mixture no more than 2 cm deep into a shallow freezer container or ice cube trays.
    2. Freeze for at least 4 hours until frozen solid. For the last 30 minutes, put 2 bowls in the freezer too.
    3. Toast the sliced almonds in a dry pan over medium heat for 3 to 4 minutes until golden. Let them cool on a plate.
    4. Cut the strawberries, peeled kiwi and mango into 1 cm cubes.
    5. Let the milk block soften for 5 minutes. Shave it into fine flakes with an ice shaver or the coarse side of a grater. If you froze ice cubes, pulse them in a blender until they look like snow.
    6. Pile the milk snow into the chilled bowls right away.
    7. Spoon the bean paste into the center and arrange the fruit and mochi around it.
    8. Drizzle 1 tbsp condensed milk over each bowl, scatter the almonds on top and serve before the ice starts to melt.
