Main course
Bulgogi is a Korean classic: thin slices of beef that you marinate in soy sauce, sesame oil, brown sugar, garlic and ginger, then grill over high heat. The meat stays tender as long as each slice spends only 1 to 2 minutes per side on the grill. Serve it with rice or wrapped in lettuce leaves.

Ingredients
- 500 g beef (sirloin or rib-eye), thinly sliced
- 4 tbsp soy sauce
- 2 tbsp sesame oil
- 2 tbsp brown sugar
- 2 garlic cloves, chopped
- 1 tbsp grated ginger
- 1 small onion, cut into thin rings
- 1 tbsp sesame seeds
- 2 scallions, sliced
- Pepper, to taste
Instructions
- Put the beef in a large bowl. Add the soy sauce, sesame oil, brown sugar, garlic, ginger and pepper, and work everything together with your hands until every slice is coated.
- Mix in the onion rings, cover the bowl and marinate the beef in the fridge for at least 30 minutes. Overnight gives it more flavor.
- Heat a grill pan or grill to high. Spread the meat out in a single layer without the slices overlapping, and cook in batches.
- Grill the beef for 1 to 2 minutes per side, until cooked through and lightly caramelized at the edges.
- Sprinkle the bulgogi with sesame seeds and scallions and serve with rice if you like.
