Soup
Bún Bò Huế is a spicy beef noodle soup from the city of Huế in central Vietnam. The broth simmers for 1 to 2 hours with ginger and kaffir lime leaves, and chili paste and fish sauce make it hot and salty. You serve it with rice noodles, fresh herbs, and lime.

Ingredients
- 400 g beef (e.g. shank and/or beef head meat)
- 200 g rice noodles (bún)
- 1 onion, halved
- 3 to 4 scallions, cut into rings
- 2 to 3 garlic cloves, chopped
- 1 piece ginger (about 5 cm), sliced
- 5 to 6 kaffir lime leaves
- 2 to 3 tbsp fish sauce
- 1 to 2 tbsp hot chili paste
- 1 liter beef broth
- 20 g fresh herbs (such as basil and mint)
- 1 to 2 limes, cut into wedges, for serving
- Salt and pepper to taste
Instructions
- Put the beef in a large pot and cover it with cold water. Bring to a boil and boil for a few minutes to remove impurities. Drain the water and rinse the meat under cold water.
- Return the beef to the pot, pour in the beef broth, and add water until the meat is covered. Add the onion, garlic, ginger, kaffir lime leaves, salt, and pepper. Bring to a boil, then simmer over low heat for 1 to 2 hours, until the beef is tender.
- Cook the rice noodles according to the package instructions and set them aside.
- When the beef is done, take it out of the broth, slice it, and keep it warm.
- Season the broth with the fish sauce and the hot chili paste. Put the prepared noodles in bowls, lay the beef on top, and ladle the hot broth over. Serve with scallions, fresh herbs, and lime wedges.
