Main course
Cơm Chiên Dương Châu is Yangzhou-style fried rice, as Vietnamese-Chinese kitchens make it. You fry day-old rice in a wok with egg, ham, shrimp, carrot, and peas. It tastes mild and salty from soy sauce, and the sesame oil gives it a nutty aroma.

Ingredients
- 320 g cooked rice, preferably from the day before
- 100 g ham, diced
- 100 g shrimp, peeled and deveined
- 1 carrot, finely diced
- 100 g peas, frozen or fresh
- 3 scallions, finely sliced
- 2 eggs, lightly beaten
- 2 tbsp soy sauce
- 1 tsp sesame oil
- Salt and pepper to taste
- 2 tbsp vegetable oil
Instructions
- Heat the vegetable oil in a large pan or wok over medium-high heat.
- Add the eggs and stir quickly to scramble and cook them.
- Add the ham, shrimp, carrots, and peas. Fry everything for about 5 minutes, until the shrimp are pink and cooked through.
- Add the cooked rice, soy sauce, and sesame oil. Mix everything well and fry the rice, stirring constantly, for another 5 minutes.
- Season with salt and pepper and add the scallions. Cook everything together for another 2 minutes.
- Serve the fried rice hot.
