Main dish
Cơm Gà Hội An is chicken rice from the city of Hội An in central Vietnam. You cook jasmine rice with turmeric until it turns yellow and top it with shredded chicken, cilantro and mint. A sauce of lime, fish sauce and chili keeps the dish fresh and hot.

Ingredients
- 1 kg chicken breast
- 400 g jasmine rice
- 1/2 tsp turmeric powder
- 560 ml water
- 1 bunch cilantro
- 1 bunch mint
- 2 limes
- 2 red chilies, finely chopped
- 4 garlic cloves, finely chopped
- 3 tbsp fish sauce
- 2 tbsp sugar
- Salt to taste
- Pepper to taste
Instructions
- Wash the jasmine rice thoroughly and let it drain.
- Cook the rice with 560 ml water, the turmeric and a pinch of salt. Let the rice rest for 10 minutes after cooking.
- Boil the chicken breast in a pot with enough water until fully cooked, about 20 minutes. Let the chicken cool, then shred it into small pieces.
- Make the sauce by mixing the lime juice, fish sauce, sugar, chopped garlic and chilies in a bowl.
- Roughly chop the cilantro and mint.
- Serve the rice on a plate, top it with the shredded chicken and garnish with the fresh herbs.
- Pour the sauce over the dish just before serving.
