Cá Kho Tộ is a traditional Vietnamese dish in which fish is slowly braised in caramel sauce in a clay pot. The fish turns sweet, savory and wonderfully tender.

Ingredients
- 800 g white fish (such as cod or tilapia), cut into pieces
- 2 tbsp sugar
- 3 tbsp fish sauce
- 1 tbsp neutral oil
- 4 garlic cloves, finely chopped
- 1 small onion, thinly sliced
- 1 tsp pepper
- 3 scallions, cut into 3 cm (1 in) pieces
- 2 small red chilies, seeded and finely chopped
- 200 ml coconut water
- fresh cilantro, to garnish
Instructions
- Melt the sugar in the clay pot over medium heat and let it caramelize.
- Add the fish sauce, oil, garlic and onion and stir until the onions soften.
- Add the fish pieces to the pot and sear them on all sides.
- Add the pepper, scallions, chilies and coconut water.
- Reduce the heat and simmer the fish for 40 minutes, until the sauce has thickened and the fish is tender.
- Garnish with fresh cilantro and serve hot.
