Cá Kho Tộ is a traditional Vietnamese dish in which fish is slowly braised in caramel sauce in a clay pot. The fish turns sweet, savory and wonderfully tender.

Ingredients

  • 800 g white fish (such as cod or tilapia), cut into pieces
  • 2 tbsp sugar
  • 3 tbsp fish sauce
  • 1 tbsp neutral oil
  • 4 garlic cloves, finely chopped
  • 1 small onion, thinly sliced
  • 1 tsp pepper
  • 3 scallions, cut into 3 cm (1 in) pieces
  • 2 small red chilies, seeded and finely chopped
  • 200 ml coconut water
  • fresh cilantro, to garnish

Instructions

  1. Melt the sugar in the clay pot over medium heat and let it caramelize.
  2. Add the fish sauce, oil, garlic and onion and stir until the onions soften.
  3. Add the fish pieces to the pot and sear them on all sides.
  4. Add the pepper, scallions, chilies and coconut water.
  5. Reduce the heat and simmer the fish for 40 minutes, until the sauce has thickened and the fish is tender.
  6. Garnish with fresh cilantro and serve hot.
