Main course
You marinate fish fillets with lemongrass, garlic, chili, and fish sauce, wrap them in banana leaves, and grill them. Inside the leaf the fish stays juicy and picks up a smoky, grassy aroma.

Ingredients
- 4 medium fish fillets (e.g. tilapia or sea bass)
- 4 banana leaves
- 2 stalks lemongrass, finely chopped
- 4 garlic cloves, finely chopped
- 2 red chilies, finely chopped
- 1 bunch cilantro, roughly chopped
- 4 tbsp fish sauce
- 2 tbsp lime juice
- 1 tsp sugar
- 1 tsp salt
- 1 tsp ground black pepper
Instructions
- Rinse the fish fillets under cold water and pat them dry.
- In a bowl, mix the lemongrass, garlic, chilies, cilantro, fish sauce, lime juice, sugar, salt, and pepper to make the marinade.
- Turn the fish fillets in the marinade and marinate in the refrigerator for at least 20 minutes.
- Warm the banana leaves briefly over an open flame to make them more pliable.
- Wrap each fish fillet in a banana leaf and tie the ends with kitchen twine.
- Preheat the grill and grill the wrapped fish packets over medium heat for about 10 minutes per side.
- Take the packets off the grill, open the banana leaf, and garnish with fresh cilantro before serving if you like.
