Cha Shao, also known as char siu or Chinese BBQ pork, is a Cantonese classic. It tastes sweet and savory, and the meat stays tender and juicy. Cantonese cooks serve it as a starter or use it in other dishes, such as dim sum or sliced over rice.

Ingredients
- 500 g pork shoulder (pork neck/collar)
- 2 tablespoons hoisin sauce
- 2 tablespoons soy sauce
- 1 tablespoon Shaoxing rice wine or dry sherry
- 1 tablespoon honey, plus extra for glazing
- 1 tablespoon sugar
- 1 teaspoon sesame oil
- 2 garlic cloves, finely chopped
- 1/2 teaspoon Chinese five-spice powder
- 1/4 teaspoon red food coloring (optional)
Instructions
- Cut the pork into long strips.
- In a large bowl, mix the hoisin sauce, soy sauce, rice wine, honey, sugar, sesame oil, garlic, five-spice powder and food coloring into a marinade.
- Add the meat to the marinade and make sure it is fully coated. Marinate in the fridge for at least 2 hours or overnight.
- Preheat the oven to 180°C (350°F). Lay the marinated meat on a baking sheet lined with parchment paper.
- Roast the meat in the preheated oven for about 25 minutes. Turn the strips over and roast for another 25 minutes.
- During the last 5 minutes, brush the meat with extra honey for a glossy glaze.
- Take the meat out of the oven and let it rest for a few minutes before slicing.
