Cheese Buldak, or fire chicken with cheese, is a popular Korean dish known for its spicy sauce and thick layer of melted cheese. Tender chicken cooks in a gochujang-based sauce and goes under a generous blanket of mozzarella.

Ingredients
- 500 g chicken breast, cut into bite-size pieces
- 2 tbsp vegetable oil
- 1 onion, diced
- 2 garlic cloves, finely chopped
- 2 tbsp gochujang (Korean red chili paste)
- 1 tbsp soy sauce
- 1 tbsp sugar
- 1 tbsp gochugaru (Korean chili flakes), optional for extra heat
- 100 ml (scant 1/2 cup) water
- 200 g shredded mozzarella
- Scallions (green onions), for garnish
- 1 tsp toasted sesame seeds
Instructions
- Heat the oil in a large pan and fry the chicken over medium heat until almost cooked through.
- Add the onion and garlic and keep frying until soft.
- Add the gochujang, soy sauce, sugar, chili flakes (if using) and water and stir well.
- Bring the sauce to a boil and let the chicken simmer for about 10 minutes, until the sauce thickens.
- Scatter the mozzarella over the chicken and put the lid on the pan. Let the cheese melt over low heat.
- Sprinkle with scallions and sesame seeds and serve.
