Chinese chicken and mushroom noodle soup is a hearty, warming dish that cooks across Asia make in many versions. The earthy depth of the mushrooms meets a light chicken broth, and the noodles make it a full meal for cooler days. In China, families often cook a soup like this as part of a larger meal or on its own as a warming dinner. Traditional Chinese medicine credits mushrooms with supporting the immune system, and the chicken adds lean protein.

Cooks often use shiitake, but also wood ear and enoki mushrooms, which give the soup more texture and a strong umami taste. You can adapt the recipe to your taste without much effort.

Ingredients

  • 200 g fresh noodles or 100 g dried noodles
  • 300 g chicken breast, cut into thin strips
  • 4 cups (960 ml) chicken broth
  • 7 or 8 shiitake mushrooms, fresh or dried (soak dried ones first), cleaned and sliced
  • 1 medium carrot, thinly sliced
  • 2 scallions (green onions), sliced into rings
  • 2 garlic cloves, finely chopped
  • 1 piece of ginger, about 2 cm, finely chopped
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • Salt and pepper to taste
  • Fresh cilantro (coriander), to garnish

Instructions

  1. Bring the chicken broth to a boil in a large pot.
  2. Add the garlic and ginger and simmer for 2-3 minutes to release their flavor.
  3. Add the chicken strips and cook over medium heat until cooked through.
  4. Add the mushrooms and carrot and simmer for another 10 minutes, until the mushrooms are soft and the carrot still has some bite.
  5. Meanwhile, cook the noodles in a separate pot according to the package directions, drain and set aside.
  6. Stir the soy sauce and sesame oil into the soup and season with salt and pepper.
  7. Divide the noodles between soup bowls and pour the hot soup over them.
  8. Garnish with scallions and fresh cilantro and serve hot.
