Salad
Liang Ban Huang Gua is a cold Chinese cucumber salad made from salted cucumber pieces. The dressing of garlic, rice vinegar, soy sauce, sugar and sesame oil tastes tangy, salty and lightly sweet. You serve it as an appetizer or as a fresh side to fried dishes.

Ingredients
- 2 large cucumbers
- 2 garlic cloves, chopped or grated
- 1 tsp salt
- 1 tsp rice vinegar or balsamic vinegar
- 1 tbsp sugar
- 2 tsp soy sauce
- 1 tsp sesame oil
- 1/2 tsp chili flakes (optional)
- 30 g roasted peanuts (optional)
- 1 tsp toasted sesame seeds, for garnish
Instructions
Prepare the cucumbers:
- Wash the cucumbers thoroughly, cut off the ends, halve them lengthwise, scoop out the seeds and cut them into pieces. Put the cucumber slices in a large bowl, sprinkle with the salt, stir well and let them rest for 15 minutes, so they lose some moisture and turn crunchier.
Marinate the cucumbers:
- Pour off the water that has collected in the bowl. Add the chopped garlic, vinegar, sugar, soy sauce and sesame oil to the cucumbers. Add chili flakes to taste for some heat.
Toss the cucumber salad:
- Mix everything well so the cucumber pieces are evenly coated with the marinade. Let the salad rest for 5 minutes before serving so the flavors can develop.
Serve:
- Put the cucumber salad in a serving bowl and garnish with toasted sesame seeds (and peanuts, if using).
