Chinese pumpkin cakes, known as "Nan Gua Bing", are a traditional Chinese sweet eaten in autumn and at festivals such as the Mid-Autumn Festival. Unlike American pumpkin pie, you don't bake them: Chinese cooks fry or steam them, which gives the cakes their soft, chewy texture. They taste mildly sweet, and many versions get extra sweetness from sugar, honey or sweet bean paste.

This recipe walks you through classic pan-fried pumpkin cakes. Serve them as a snack or a dessert. They show how plain and close to the ingredients Chinese sweets can be, and they make a change from the usual cakes and bakes.

Ingredients

  • 500 g pumpkin or squash (red kuri or butternut), peeled and grated
  • 200 g glutinous rice flour
  • 100 g sugar
  • 50 g white sesame seeds
  • Water, as needed
  • Vegetable oil, for frying

Instructions

    Prepare the pumpkin:

    1. Peel and seed the pumpkin and grate it coarsely. In a large pot over medium heat, mix the grated pumpkin with the sugar and cook for about 10 minutes, until the pumpkin softens and most of the liquid has evaporated.

    Make the dough:

    1. Let the cooked pumpkin cool a little. Then mix in the glutinous rice flour and sesame seeds. Add water as needed until you have a dough you can shape.

    Shape the cakes:

    1. Roll the dough into small balls and press them into flat cakes about 1 cm (1/2 inch) thick.

    Fry:

    1. Heat enough vegetable oil in a large frying pan. Fry the pumpkin cakes over medium heat for 3-5 minutes per side, until golden brown and crisp outside.

    Serve:

    1. Drain the fried pumpkin cakes on paper towels and serve warm, as a dessert or a sweet snack.
