Gao Dian, also called Chinese rice cake, is a traditional sweet pastry that Chinese families often serve at festivals and on special occasions. The cakes are soft, lightly sweet and pleasantly chewy.

Ingredients

  • 200 g glutinous rice flour
  • 50 g sugar
  • 300 ml (1 1/4 cups) water
  • 1 tsp baking powder
  • 1 tbsp cooking oil
  • Optional: red bean paste or sweetened lotus seed paste, for filling

Instructions

  1. Mix the glutinous rice flour, sugar and baking powder in a large bowl.
  2. Add the water slowly, stirring well, until you have a smooth dough.
  3. Work the oil into the dough until it feels soft and pliable.
  4. Divide the dough into small portions. If you like, press a little red bean or lotus paste into each portion as a filling.
  5. Roll the portions into balls and flatten them slightly.
  6. Place the cakes on a baking sheet lined with parchment paper.
  7. Bake in a preheated oven at 180°C (350°F) for about 25-30 minutes, until golden brown.
  8. Take the rice cakes out of the oven and let them cool on a wire rack.
