Salad

This Chinese cucumber salad is fresh, garlicky and sharp, and it belongs in any collection of Chinese recipes. Known in China as Liang Ban Huang Gua, it is a cooling side dish for hot weather. You get crunchy cucumbers in a dressing of garlic, vinegar, soy sauce and sesame oil, and those few ingredients give the salad plenty of depth.

The Chinese cucumber salad takes minutes to make and goes with a lot of food. Serve it as a starter or as a light side next to rich main dishes. Its sour, salty bite wakes up your palate and sharpens your appetite, so it fits alongside a wide range of dishes.

On warm days, when you want something light that still has flavor, this salad cools you down. It balances sweet, sour, salty and umami and shows how a handful of ingredients and a simple method can produce a lot of flavor. Each bite of the Chinese cucumber salad tastes fresh and bright.

With this recipe you can bring a taste of China to your own kitchen. Anyone who likes fresh, punchy Chinese flavors will enjoy it, and you will see how easy it is to make an authentic Chinese cold appetizer at home.

Ingredients

  • 2 large cucumbers
  • 2 garlic cloves, chopped or grated
  • 1 tsp salt
  • 1 tsp rice vinegar or balsamic vinegar
  • 1 tbsp sugar
  • 2 tsp soy sauce
  • 1 tsp sesame oil
  • A few chili flakes (optional)
  • A handful of peanuts (optional)
  • Toasted sesame seeds, for garnish

Instructions

    Prepare the cucumbers:

    1. Wash the cucumbers, trim the ends, halve them lengthwise, scoop out the seeds and cut them into pieces. Put the pieces in a large bowl, sprinkle with the salt, toss well and let them sit for 15 minutes so they release some water and turn crunchier.

    Marinate the cucumbers:

    1. Pour off the water that has collected in the bowl. Add the chopped garlic, vinegar, sugar, soy sauce and sesame oil to the cucumbers. Add chili flakes if you want some heat.

    Toss the salad:

    1. Mix everything well so the dressing coats each piece of cucumber. Let the salad rest for 5 minutes before serving so the flavors come together.

    Serve:

    1. Transfer the salad to a serving bowl and garnish with toasted sesame seeds (and peanuts, if using).
