Main course
Chuncheon Dakgalbi is a popular Korean dish of spicy marinated chicken stir-fried with vegetables and sweet potato in a large pan. People love it for its deep, spicy flavor and for the way everyone at the table eats straight from the pan.

Ingredients
- 600 g chicken breast, cut into pieces
- 2 sweet potatoes, sliced
- 1 large onion, sliced
- 100 g cabbage, roughly chopped
- 2 carrots, cut into thin strips
- 1 bunch scallions (green onions), cut into pieces
- 100 g tteok (Korean rice cakes), optional
- 3 tablespoons soy sauce
- 2 tablespoons gochujang (Korean chili paste)
- 1 tablespoon grated ginger
- 4 garlic cloves, finely chopped
- 2 tablespoons sesame oil
- 1 tablespoon sugar
- 1 teaspoon ground black pepper
- Sesame seeds to garnish
Instructions
- Mix the soy sauce, gochujang, ginger, garlic, sesame oil, sugar and pepper in a large bowl to make the marinade.
- Add the chicken to the marinade and make sure every piece is well coated. Marinate for at least 20 minutes.
- Heat a large frying pan or wok over medium heat. Add the marinated chicken and fry for 5 minutes.
- Add the sweet potatoes, onion, cabbage, carrots and rice cakes. Cook, stirring often, for about 15 minutes, until the vegetables are soft and the chicken is cooked through.
- Scatter the scallions and sesame seeds over the top and serve straight from the pan.
