Main course
Cơm Chiên Cá Mặn is fried rice with crisp pan-fried salted fish, egg, carrot and scallions. The fish brings strong saltiness and umami, so you need little other seasoning. It is a good way to use up leftover rice.

Ingredients
- 320 g cooked rice, preferably day-old
- 100 g salted fish, finely diced
- 2 scallions, thinly sliced
- 1 carrot, diced
- 2 eggs, beaten
- 2 garlic cloves, finely chopped
- 1 tbsp soy sauce
- 1 tsp sesame oil
- 1 tsp sugar
- oil for frying
- fresh cilantro, to garnish
- sliced cucumber, to serve
Instructions
- Fry the salted fish in a dry pan over medium heat until crisp. Set aside.
- Heat oil in a deep pan or wok and fry the garlic until fragrant.
- Add the carrot and cook for a few minutes until soft.
- Add the rice and stir well so it mixes with the oil and garlic.
- Pour the beaten eggs over the rice, stir and cook until the eggs are fully set.
- Add the salted fish, scallions, soy sauce, sesame oil and sugar. Stir well and fry everything together for a few minutes.
- Garnish with fresh cilantro and serve with sliced cucumber.
