Cơm Chiên Dương Châu is Yangzhou-style fried rice, as Vietnamese-Chinese kitchens make it. You fry day-old rice in a wok with egg, ham, shrimp, carrot, and peas. It tastes mild and salty from soy sauce, and the sesame oil gives it a nutty aroma.

Ingredients

  • 320 g cooked rice, preferably from the day before
  • 100 g ham, diced
  • 100 g shrimp, peeled and deveined
  • 1 carrot, finely diced
  • 100 g peas, frozen or fresh
  • 3 scallions, finely sliced
  • 2 eggs, lightly beaten
  • 2 tbsp soy sauce
  • 1 tsp sesame oil
  • Salt and pepper to taste
  • 2 tbsp vegetable oil

Instructions

  1. Heat the vegetable oil in a large pan or wok over medium-high heat.
  2. Add the eggs and stir quickly to scramble and cook them.
  3. Add the ham, shrimp, carrots, and peas. Fry everything for about 5 minutes, until the shrimp are pink and cooked through.
  4. Add the cooked rice, soy sauce, and sesame oil. Mix everything well and fry the rice, stirring constantly, for another 5 minutes.
  5. Season with salt and pepper and add the scallions. Cook everything together for another 2 minutes.
  6. Serve the fried rice hot.
