Cơm Tấm Sườn Bì Chả, broken rice with pork chop

Ingredients

  • 200 g broken rice
  • 2 pork chops
  • 1 tbsp fish sauce
  • 2 garlic cloves, chopped
  • 1 tbsp sugar
  • 1 tbsp vegetable oil
  • 100 g pork skin
  • 1 egg
  • 1 tbsp tapioca flour
  • 100 ml coconut milk
  • Salt and pepper to taste
  • 10 g fresh herbs (cilantro, mint)
  • 4 cucumber slices and 4 tomato slices for garnish
  • 50 g pickled radish and carrots

Instructions

  1. Marinate the pork chops with the fish sauce, garlic, sugar, salt and pepper and let them rest for at least 20 minutes.
  2. Cook the rice according to the package directions, keeping an eye out for slightly broken grains.
  3. Cut the pork skin into thin strips and boil in boiling water for 20 minutes, then let cool.
  4. For the egg cake, whisk the egg, tapioca flour, coconut milk and a pinch of salt into a smooth batter.
  5. Heat the oil in a pan and pour in the egg mixture in a thin layer. Cook until golden brown on both sides, then take it out of the pan and cut into strips.
  6. Grill the marinated chops over medium heat for 5 to 7 minutes on each side, until cooked through.
  7. Plate the broken rice with a chop, egg cake strips, pork skin strips and fresh herbs.
  8. Garnish with cucumber, tomatoes and the pickled radish and carrots.
