Daifuku mochi are small rice cakes made from glutinous rice flour, filled with anko, a sweet red bean paste. The wrapper is soft and sticky, the filling sweet with a nutty bean flavor. You cook the dough in the microwave and have 12 pieces ready in 70 minutes.

Ingredients
- 150 g mochiko (sweet rice flour)
- 180 ml water
- 50 g sugar
- 30 g cornstarch for dusting
- 300 g anko (sweet red bean paste)
Instructions
- Mix the mochiko, water and sugar in a microwave-safe bowl.
- Cover the bowl with plastic wrap and microwave on high for 2 minutes. Remove, stir and cook for another 2 minutes.
- Turn the microwaved mochi dough out onto a surface dusted with cornstarch and let it cool.
- Once the dough is just warm to the touch, divide it into 12 equal pieces.
- Flatten each piece, put a spoonful of anko in the center and seal the mochi around the filling so the anko is completely enclosed.
- Dust the finished daifuku mochi with a little cornstarch to keep them from sticking.
