Main course
Dak Kkochi are Korean chicken skewers from the street stall. You marinate chicken breast in soy sauce, honey and gochujang and grill it until the edges caramelize. The skewers taste sweet, salty and slightly spicy, and they suit a barbecue night or a quick dinner with rice.

Ingredients
- 500 g chicken breast, cut into cubes
- 2 tbsp soy sauce
- 1 tbsp sesame oil
- 2 tbsp honey
- 1 garlic clove, finely chopped
- 1 tsp grated ginger
- 1 tbsp gochujang (Korean chili paste)
- 1 tbsp rice wine or mirin
- 1 tsp black pepper
- 8 wooden or metal skewers
Instructions
- Put the chicken cubes in a bowl.
- Add the soy sauce, sesame oil, honey, chopped garlic, ginger, gochujang, rice wine and black pepper and stir well.
- Cover the chicken and marinate it in the fridge for at least 20 minutes.
- If you use wooden skewers, soak them in water for 10 minutes before grilling.
- Thread the marinated chicken onto the skewers.
- Preheat the grill to medium heat and grill the skewers for about 3 to 5 minutes per side, until cooked through.
- Optionally, brush with extra gochujang or a mix of soy sauce and honey and let it caramelize briefly.
- Let the skewers rest briefly before serving.
