Breakfast
Dàn Bǐng is a popular Taiwanese breakfast dish made of a thin, lightly crispy dough sheet that is topped with egg and pan-fried. It is often served with soy sauce and toppings such as scallions or ham.

Ingredients
- 1 small dough sheet (store-bought or homemade)
- 1 large egg
- 1 tsp vegetable oil
- 1 tbsp finely chopped scallions
- 1 slice ham, finely chopped (optional)
- Soy sauce for serving
Instructions
- Heat the oil in a medium pan over medium heat.
- Put the dough sheet in the pan and cook it for about 1 minute, until lightly crispy.
- Crack the egg into a small bowl and beat it lightly.
- Pour the egg evenly over the dough sheet in the pan.
- Sprinkle the chopped scallions and, if you like, the ham over the egg.
- Let the egg set and keep cooking the dough sheet until the egg is fully set and the dough sheet is crispy, about 2 to 3 minutes.
- Fold the Dàn Bǐng over in the pan and let it cook a little longer if needed.
- Take the Dàn Bǐng out of the pan and serve it hot with a dab of soy sauce.
