Breakfast

Dàn Bǐng is a popular Taiwanese breakfast dish made of a thin, lightly crispy dough sheet that is topped with egg and pan-fried. It is often served with soy sauce and toppings such as scallions or ham.
Dàn Bǐng, Taiwanese breakfast egg pancake

Ingredients

  • 1 small dough sheet (store-bought or homemade)
  • 1 large egg
  • 1 tsp vegetable oil
  • 1 tbsp finely chopped scallions
  • 1 slice ham, finely chopped (optional)
  • Soy sauce for serving

Instructions

  1. Heat the oil in a medium pan over medium heat.
  2. Put the dough sheet in the pan and cook it for about 1 minute, until lightly crispy.
  3. Crack the egg into a small bowl and beat it lightly.
  4. Pour the egg evenly over the dough sheet in the pan.
  5. Sprinkle the chopped scallions and, if you like, the ham over the egg.
  6. Let the egg set and keep cooking the dough sheet until the egg is fully set and the dough sheet is crispy, about 2 to 3 minutes.
  7. Fold the Dàn Bǐng over in the pan and let it cook a little longer if needed.
  8. Take the Dàn Bǐng out of the pan and serve it hot with a dab of soy sauce.
