Dan dan noodles (dan dan mian) come from Sichuan and are one of the best-known Chinese noodle dishes. You mix a sauce of chili oil, sesame paste, soy sauce, black vinegar and freshly toasted Sichuan pepper, then top the noodles with crispy fried ground pork and pickled mustard greens. Blanched bok choy and scallions go on last.

Ingredients

    For the noodles:

    • 400 g dried wheat noodles (or 600 g fresh)
    • 200 g bok choy, quartered lengthwise
    • 2 scallions (green onions), thinly sliced

    For the pork:

    • 250 g ground pork
    • 2 tbsp vegetable oil
    • 2 tbsp ya cai (Sichuan pickled mustard greens)
    • 2 garlic cloves, finely chopped
    • 1 piece ginger (2 cm), finely chopped
    • 1 tbsp Shaoxing wine (Chinese cooking wine)
    • 1 tbsp light soy sauce

    For the sauce:

    • 3 tbsp light soy sauce
    • 2 tbsp Chinese sesame paste (or tahini)
    • 2 tbsp Chinkiang vinegar (Chinese black vinegar)
    • 3 tbsp chili oil with sediment
    • 1 tsp whole Sichuan peppercorns
    • 1 tsp sugar

    Instructions

    1. Toast the Sichuan peppercorns in a dry pan over medium heat for 1 to 2 minutes until fragrant. Let them cool briefly, then grind them to a fine powder in a mortar.
    2. Whisk the sesame paste, soy sauce, vinegar, sugar, chili oil and ground pepper until smooth. Divide the sauce between 4 bowls.
    3. Heat the oil in a wok over high heat. Stir-fry the pork for 5 to 6 minutes until crumbly, browned and cooked through.
    4. Add the garlic, ginger and ya cai and fry for 2 minutes until fragrant. Pour in the Shaoxing wine and 1 tbsp soy sauce and cook for 1 minute until the pan is almost dry.
    5. Cook the noodles in plenty of water according to the package directions, usually 4 to 6 minutes. Add the bok choy for the last minute.
    6. Before draining, scoop out 150 ml of the cooking water. Stir 2 to 3 tbsp into the sauce in each bowl until it turns loose and glossy.
    7. Divide the noodles and bok choy between the bowls, spoon the pork on top and scatter over the scallions. Toss everything at the table until the noodles are coated in sauce.
