Daoxiao mian are noodles from Shanxi province that you shave with a knife straight from a block of dough into boiling water. The strips are thick in the middle and thin at the edges, so they stay chewy and hold sauce well. Serve them with vegetables and meat or in a broth.

Ingredients
- 300 g all-purpose flour
- 120 ml water
- 1/2 tsp salt
- 2 tbsp vegetable oil
- 1 liter water for boiling
- Optional: vegetables and meat as a side
Instructions
- Mix the flour and salt in a large bowl.
- Slowly add the water, stirring constantly, to form a smooth dough.
- Turn the dough out onto a work surface and knead vigorously for about 15 minutes, until supple.
- Brush the dough with vegetable oil, wrap it in plastic and let it rest for 30 minutes.
- Cut the dough into several small blocks.
- Hold each block in your hand and shave thin strips of noodle with a sharp knife straight into the boiling water.
- Cook the noodles until they float to the surface, then cook for about 1 minute more.
- Drain the noodles and serve with vegetables and cooked meat as you like.
