Donburi is a popular Japanese dish of a bowl of rice with various savory toppings. Typical variations are gyudon (beef), katsudon (cutlet), oyakodon (chicken with egg) or tendon (tempura). This simple but versatile dish can be varied to taste.

Ingredients

    Ingredients

    • 2 bowls cooked Japanese rice
    • 200 g protein of your choice (e.g. beef, chicken, pork, tempura)
    • 1 onion (cut into fine strips)
    • 2 eggs (lightly beaten)
    • 200 ml dashi stock
    • 2 tbsp soy sauce
    • 1 tbsp mirin
    • 1 tsp sugar
    • 1/2 tsp salt
    • 1 scallion (chopped)
    • 1 tsp toasted sesame seeds.

    Instructions

    1. Heat the dashi in a pot and season with soy sauce, mirin, sugar and salt.
    2. Add the sliced onion to the stock and simmer for 5 minutes.
    3. Add the meat or tempura and keep cooking until done.
    4. Slowly pour the beaten eggs into the stock and let them set over medium heat.
    5. Divide the cooked rice among bowls and spoon the mixture over it.
    6. Garnish with scallions and sesame seeds and serve hot.
