Ingredients

  • 200 g doraji (bellflower root), cleaned and cut into strips
  • 2 scallions, finely sliced
  • 1 tsp toasted sesame oil
  • 1 tsp sesame seeds
  • 1/2 tsp salt
  • 1/2 tsp sugar
  • 1 tbsp soy sauce
  • 1 tsp Korean chili flakes (optional)

Instructions

  1. Soak the doraji root in cold water for 20 minutes, then wash it thoroughly under running water.
  2. Bring a pot of water to a boil and blanch the doraji root for about 5 minutes. Then rinse it in cold water and drain well.
  3. In a large bowl, mix the blanched doraji root with the scallions, sesame oil, sesame seeds, salt, sugar, soy sauce and the chili flakes, if using.
  4. Let the salad rest for at least 10 minutes before serving so the flavors can come together.
