Dessert
Dorayaki are two small Japanese pancakes with sweet adzuki bean paste (anko) in between. The honey batter turns fluffy and tastes of caramel, and the filling is dense and sweet. Eat them as a dessert or with tea.

Ingredients
- 2 eggs
- 100 g sugar
- 1 tbsp honey
- 160 g flour
- 1 tsp baking powder
- 140 ml milk
- 1 tsp vegetable oil
- 200 g anko (sweet adzuki bean paste)
Instructions
- Beat the eggs, sugar and honey in a large bowl until foamy.
- Sift the flour and baking powder into the egg mixture and stir well.
- Slowly stir in the milk until the batter is smooth.
- Grease a pan lightly with oil and warm it over medium heat.
- Pour about 2 tbsp of batter per pancake into the pan and cook for 1 to 2 minutes, until small bubbles appear on the surface.
- Flip the pancake and cook for another 1 to 2 minutes, until golden brown.
- Let the pancakes cool on a plate.
- Take one pancake, spread a layer of anko on it and top with a second pancake to make a sandwich.
- Repeat until all the pancakes are used.
