Dessert
Dòu Huā, also called tofu pudding, is a traditional Chinese dessert made from very soft tofu. You usually serve it with a sweet ginger syrup, and it has a smooth, silky texture.

Ingredients
- 400 g silken tofu
- 1 cup water
- 1/2 cup sugar
- 1 piece ginger (about 5 cm), peeled and thinly sliced
- Optional: goji berries or other toppings
Instructions
- Make the ginger syrup: bring the water, sugar and ginger slices to a boil in a small pot. Simmer for 5 minutes until the syrup thickens slightly.
- Take the syrup off the heat and let it cool. Remove the ginger slices.
- Cut the silken tofu carefully into cubes, or spoon it into bowls.
- Pour the cooled ginger syrup over the tofu.
- Top the tofu pudding with goji berries or other toppings as you like.
- Chill the tofu pudding before serving if you prefer it cold.
