Dòu jiāng tāng is a traditional Chinese soup made mainly from soy milk. It is often eaten for breakfast and can be made sweet or savory. This recipe covers the savory version with mushrooms and scallions.

Ingredients
- 1 liter unsweetened soy milk
- 100 g shiitake mushrooms, fresh or dried
- 50 g scallions, finely chopped
- 1 tbsp soy sauce
- 1 tsp sesame oil
- Salt to taste
- White pepper to taste
- 5 drops chili sauce (optional)
Instructions
- If you use dried shiitake mushrooms, first soak them in warm water for about 20 minutes. Then drain and slice thinly.
- Bring the soy milk to a boil in a large pot. Keep the heat at medium to prevent it from boiling over.
- Once the soy milk boils, add the sliced mushrooms and simmer for about 10 minutes.
- Add the soy sauce, sesame oil, salt and white pepper and stir well.
- Let the soup simmer gently for another 5 minutes.
- Finally, stir in the chopped scallions and take the soup off the heat.
- If you like, add a few drops of chili sauce to give the soup a spicy kick.
- Serve the soup hot.
