Dessert

Dòu Huā, also called tofu pudding, is a traditional Chinese dessert made from very soft tofu. You usually serve it with a sweet ginger syrup, and it has a smooth, silky texture.

Ingredients

  • 400 g silken tofu
  • 1 cup water
  • 1/2 cup sugar
  • 1 piece ginger (about 5 cm), peeled and thinly sliced
  • Optional: goji berries or other toppings

Instructions

  1. Make the ginger syrup: bring the water, sugar and ginger slices to a boil in a small pot. Simmer for 5 minutes until the syrup thickens slightly.
  2. Take the syrup off the heat and let it cool. Remove the ginger slices.
  3. Cut the silken tofu carefully into cubes, or spoon it into bowls.
  4. Pour the cooled ginger syrup over the tofu.
  5. Top the tofu pudding with goji berries or other toppings as you like.
  6. Chill the tofu pudding before serving if you prefer it cold.
