Main course
Dwaeji Bulgogi is thinly sliced pork shoulder that you marinate in gochujang, soy sauce, and honey and grill over high heat. The meat tastes hot and lightly sweet, with a smoky char from the grill. Rice and fresh salad go well with it.

Ingredients
- 600 g pork shoulder, thinly sliced
- 3 tbsp gochujang (Korean chili paste)
- 2 tbsp soy sauce
- 1 tbsp sesame oil
- 1 tbsp sugar
- 4 garlic cloves, finely chopped
- 1 medium onion, sliced
- 2 scallions, cut into pieces
- 1 tsp ground black pepper
- 1 tsp ginger, grated
- 1 tbsp rice wine (or dry sherry)
- 1 tbsp honey
- Sesame seeds for garnish
Instructions
- In a large bowl, stir the gochujang, soy sauce, sesame oil, sugar, garlic, ginger, rice wine, and honey into a smooth marinade.
- Add the pork to the marinade and make sure every piece is well coated.
- Cover the bowl and marinate the meat in the refrigerator for at least 2 hours.
- Preheat the grill or a grill pan to high heat.
- Place the marinated meat on the grill together with the onion slices and scallions.
- Grill the meat for 2 to 3 minutes on each side, until well browned and cooked through.
- Transfer the grilled meat to a platter and sprinkle with sesame seeds.
- Serve hot with rice and fresh salad.
