Fan Qie Chao Dan is a Chinese everyday dish of softly scrambled eggs and tomatoes. The tomatoes break down into a sweet and sour sauce that you eat with rice. It is on the table in 15 minutes.

Ingredients
- 4 large eggs
- 2 large ripe tomatoes, diced
- 2 scallions, finely sliced
- 1 tsp salt
- 1/2 tsp sugar
- 2 tbsp vegetable oil
- 1 tsp sesame oil (optional)
Instructions
- Crack the eggs into a bowl and add the salt. Beat well.
- Heat the vegetable oil in a pan over medium heat.
- Pour the eggs into the pan and stir gently until they are almost set, then take them out of the pan and set them aside.
- In the same oil, add the diced tomatoes, sprinkle with the sugar and cook for about 2 minutes, until the tomatoes soften.
- Return the half-cooked eggs to the pan with the tomatoes and stir gently to combine. Cook for another 1 to 2 minutes.
- Arrange the dish on a plate and garnish with the sliced scallions and a splash of sesame oil, if using.
