Ingredients

  • 4 large eggs
  • 2 large ripe tomatoes, diced
  • 2 scallions, finely sliced
  • 1 tsp salt
  • 1/2 tsp sugar
  • 2 tbsp vegetable oil
  • 1 tsp sesame oil (optional)

Instructions

  1. Crack the eggs into a bowl and add the salt. Beat well.
  2. Heat the vegetable oil in a pan over medium heat.
  3. Pour the eggs into the pan and stir gently until they are almost set, then take them out of the pan and set them aside.
  4. In the same oil, add the diced tomatoes, sprinkle with the sugar and cook for about 2 minutes, until the tomatoes soften.
  5. Return the half-cooked eggs to the pan with the tomatoes and stir gently to combine. Cook for another 1 to 2 minutes.
  6. Arrange the dish on a plate and garnish with the sliced scallions and a splash of sesame oil, if using.
