Salad
Gỏi Bò is a fresh Vietnamese beef salad for hot days. Crunchy vegetables and tender beef meet a sharp lime dressing that balances sweet, sour and umami.

Ingredients
- 400 g beef, thinly sliced
- 1 carrot, cut into fine strips
- 1 cucumber, seeded and cut into strips
- 1 small red onion, thinly sliced
- 1 handful mint leaves, roughly chopped
- 1 handful cilantro (coriander), roughly chopped
- 1 handful Vietnamese coriander (rau răm), roughly chopped
- 2 garlic cloves, finely chopped
- 2 red chilies, seeded and finely chopped
- Juice of 2 limes
- 2 tablespoons fish sauce
- 1 tablespoon sugar
- 50 g roasted peanuts, roughly chopped
- Salt and pepper to taste
Instructions
- Sear the beef quickly in a hot pan until just cooked through. Set aside and let it cool.
- Combine the carrot, cucumber, red onion, mint, cilantro and Vietnamese coriander in a large bowl.
- For the dressing, stir the garlic, chilies, lime juice, fish sauce and sugar together in a small bowl until the sugar has dissolved.
- Add the cooled beef to the vegetables.
- Pour the dressing over the salad and toss well.
- Season with salt and pepper.
- Divide the salad between plates and sprinkle with the chopped peanuts.
