Gỏi Sứa, a traditional Vietnamese jellyfish salad, pairs the crunchy bite of jellyfish with fresh herbs and a punchy dressing. Serve it as a light, refreshing meal or as a starter.

Ingredients
- 200 g prepared jellyfish
- 1 small carrot, julienned
- 1 small cucumber, julienned
- 1 handful fresh cilantro (coriander), roughly chopped
- 1 handful fresh mint, roughly chopped
- 2 scallions (green onions), thinly sliced
- 2 tbsp roasted peanuts, roughly chopped
- 1 red chili, finely chopped
For the dressing:
- 3 tbsp fish sauce
- 2 tbsp lime juice
- 1 tsp sugar
- 1 garlic clove, finely chopped
- 1 tsp grated ginger
Instructions
- Prepare the jellyfish according to the package directions and drain it.
- Combine the carrot, cucumber, cilantro, mint and scallions in a large bowl.
- For the dressing, whisk the fish sauce, lime juice, sugar, garlic and ginger together in a small bowl.
- Pour the dressing over the vegetables and toss well.
- Add the jellyfish and fold everything together gently so you don't crush the ingredients.
- Arrange the salad on plates and garnish with the chopped peanuts and red chili.
