Gai Satay (ไก่สะเต๊ะ) – Chicken Skewers with Peanut Sauce

At street stalls in Thailand you get satay as small skewers of chicken or pork, marinated in coconut milk, turmeric and curry powder and grilled over charcoal. You cook the peanut sauce with coconut milk and red curry paste, and tamarind gives it acidity. Ajad goes with it, a sweet and sour cucumber salad with shallots and chili. At many stalls there is also toasted white bread on the plate for dipping.

The Thai sauce tastes of curry and coconut and runs thinner off the spoon than the Malaysian version in Satay Ayam. Indonesian skewers such as Sate Maranggi you eat with sambal and sweet soy sauce. For the Thai flavor, use chicken thighs instead of breast; they stay juicy on the hot grill.

A quick sauce without curry paste for summer rolls is in peanut sauce. You mix the paste for this recipe yourself following red curry paste, or buy it at an Asian grocery store.

Ingredients

    For the skewers:

    • 600 g chicken thighs, skinless and boneless
    • 100 ml coconut milk
    • 1 tbsp fish sauce
    • 1 tbsp sugar
    • 1 tsp curry powder
    • 1 tsp ground turmeric
    • 1 tsp ground coriander
    • 2 garlic cloves, grated
    • 1 tbsp vegetable oil
    • 20 wooden skewers

    For the satay sauce:

    • 200 ml coconut milk
    • 1 tbsp red curry paste
    • 100 g roasted, unsalted peanuts, finely ground
    • 2 tbsp palm sugar or brown sugar
    • 1 tbsp tamarind paste
    • 1/2 tsp salt
    • 100 ml water

    For the ajad:

    • 1 cucumber (300 g)
    • 2 shallots
    • 1 red chili
    • 80 ml rice vinegar
    • 80 ml water
    • 3 tbsp sugar
    • 1/2 tsp salt
    • Cilantro for garnish

    Instructions

    1. Soak the wooden skewers in water for 30 minutes. Cut the chicken into strips 1 cm thick and 3 cm wide.
    2. Stir the coconut milk, fish sauce, sugar, curry powder, turmeric, coriander and garlic together. Mix the meat into it and let it marinate covered in the fridge for at least 60 minutes.
    3. For the ajad, bring the vinegar, water, sugar and salt to a boil until the sugar dissolves, and let the liquid cool. Quarter the cucumber lengthwise and cut it into thin slices, the shallots into rings and the chili into slices. Pour the liquid over them.
    4. Heat the coconut milk for the sauce in a small pot and stir the curry paste into it for 2 minutes, until red fat separates.
    5. Add the peanuts, palm sugar, tamarind, salt and water and let the sauce simmer for 5 minutes, stirring, until it is creamy. If it is too thick, thin it with 2 tbsp water.
    6. Thread the meat onto the skewers in a wave shape and brush it with oil.
    7. Grill the skewers on a charcoal grill or in a grill pan over high heat for 3 to 4 minutes per side, until the edges show dark spots.
    8. Arrange the skewers with the warm sauce and the ajad and scatter cilantro over them.
