A classic of Cantonese cooking, gan chao niu he is made of wide rice noodles stir-fried with beef and vegetables in an aromatic sauce. It is known for its signature "wok hei", the lightly smoky flavor that comes from frying fast over high heat.

Ingredients
- 200 g wide rice noodles
- 200 g beef, cut into strips
- 2 tbsp soy sauce
- 1 tbsp oyster sauce
- 1 tbsp dark soy sauce
- 2 tsp sugar
- 2 garlic cloves, finely chopped
- 1 bunch scallions, cut into 2 cm pieces
- 1 red bell pepper, cut into strips
- 2 tbsp vegetable oil
- 1 tsp sesame oil
- Salt and pepper to taste
Instructions
- Prepare the rice noodles according to the package instructions and set aside.
- Marinate the beef with the soy sauce, dark soy sauce, oyster sauce, and sugar and let it rest for 10 minutes.
- Heat the vegetable oil in a wok or large pan until very hot and sear the beef quickly until almost cooked through. Then take it out of the wok.
- In the same wok, briefly fry the garlic, then add the bell pepper and fry for a few minutes.
- Return the cooked noodles and the beef to the wok. Mix well and fry for 5 more minutes, until the noodles are hot and slightly crisp.
- Finally, stir in the scallions and sesame oil and season with salt and pepper.
- Serve immediately.
